Todd Allen, formerly of The Brass Rail in Hoboken, joins NICO Kitchen + Bar as Chef de Cuisine

NJPAC’s restaurant to retain “Italian Without Borders” menu concept with new twists

 

Todd Allen of Wayne, N.J., a chef who has been employed by some of the state’s most recognized restaurants and country clubs, has joined the staff of NJPAC’s NICO Kitchen + Bar as the new Chef de Cuisine. The announcement was made by NJPAC and Culinaire of Dallas, a food and beverage management company that operates the restaurant as well as its catering component, Theater Square Events.

 

Allen will consult with Executive Chef Ryan DePersio (Fascino restaurant in Montclair, Battello in Jersey City) on new culinary interpretations of DePersio’s “Italian Without Borders” creations, recently awarded a three-star rating by The New York Times. Adam Rose, Nico’s Chef de Cuisine when the restaurant opened in 2012, recently departed to open Villalobos restaurant in Montclair.

 

“NICO Kitchen + Bar is excited to welcome Chef Todd Allen on board as its new Chef de Cuisine,” said Jon Reininga, General Manager of Culinaire at NJPAC. “There’s a lot of anticipation over the new specialties he’s planned for our customers and refreshes of Chef Ryan DePersio’s popular lunch and dinner menus.”

 

The 41-year-old Allen, who was raised in his hometown, is a former advertising executive who completed studies at the Institute of Culinary Education in New York. He also holds a bachelor’s degree in Communications from the University of Hartford. He received his early training at the acclaimed Restaurant Serenade in Chatham and the Trump properties Mar-a-Lago in Palm Beach, Fla. and Trump National Golf Club in Bedminster.

 

Allen was Executive Sous Chef at Metuchen Golf and Country Club in Edison and Crestmont Country Club in West Orange. He served as Chef de Cuisine at Il Pomodoro and Tapastre in Somerville and, most recently, at The Brass Rail in Hoboken.

 

NICO Kitchen + Bar is located at NJPAC, 1 Center St., Newark, N.J. For reservations, call 973-642-1226 or visit nicokitchenbar.com. Lunch hours are Monday-Friday from 11:30am-3pm, with Happy Hour from 4-7pm. Dinner hours are Monday-Thursday until 9pm and Friday until 11pm. Saturday and Sunday dinners are served in conjunction with performances. A prix-fixe menu only is offered on show nights.
